 Boil water in a pot.
Add 1 teaspoon of baking soda per 6 eggs.
Carefully drop the eggs in and bring the heat down to medium high.
Boil for the desired doneness: 6 minutes for jammy eggs, 12 minutes for fully cooked, depending on your altitude.
Have an ice bath ready to drop the eggs into for 5 minutes.
Using a small spoon, tap the shell and remove a bit from the bottom.
Slide the spoon up between the egg and the shell and twist it around until the shell falls off.
