Instructions

1: Soak the wooden skewers in water for at least 4 hours.

2: Combine all ingredients except chicken in a food processor and pulse 8-10 times. If no food processor, finely chop raw bacon and mix with other ingredients.

3: Trim excess fat off the chicken thighs and cut into long strips.

4: Add chicken strips to a bowl and mix to combine with the bacon sauce. Marinate for at least 1 hour, or up to 24 hours.

5: Remove skewers from water and thread 2 chicken strips on each skewer. Top with remaining marinade.

6: Preheat grill to LOW.

7: Grill skewers for 10-12 minutes total, turning often and basting with more BBQ sauce when they're almost done. Check that the internal temperature reaches at least 165 degrees.
