Reuben Sandwiches

1: For the Thousand Island dressing, combine mayonnaise, ketchup, sweet pickle relish, lemon juice, grated onion, salt, and pepper in a bowl.

2: Mix well until all ingredients are blended and set aside.

3: Heat a skillet over medium heat and melt the butter.

4: Assemble the sandwiches by layering corned beef, sauerkraut, Swiss cheese, and dressing between two slices of rye bread.

5: Grill the sandwiches in the skillet until the bread is golden brown and the cheese is melted, about 5 minutes on each side.

6: Cut the sandwiches in half and serve hot with additional thousand island dressing on the side.
